Choco-Coconut Peanut Bars

I started off Saturday wanting to make easy coconut macaroons (coconut, vanilla, and 1 can sweetened condensed milk). However, I had no where near enough coconut for that to work. After being annoyed about this, I decided to rummage and see what else I could find. I came up with Reese’s mini pb cups, peanuts, chocolate chips, and graham crackers. Sounded like the makings for some new yummy magic bars!

With my trusty tot assistant, we “beat up” the graham crackers (1.5 cups crushed) and stirred that together with melted butter (1/2 cup). After greasing a 9×12″ baking pan, the graham cracker butter mixture was spread in the bottom of the pan. Push down on this firmly. Pour half of the can of sweetened condensed milk on top and spread it evenly around. Stir the other half of the can together with 2.5 cups coconut and 1 cup chocolate chips. Spread this in your pan. Then sprinkle 1 cup of lightly crushed unsalted peanuts on top of the coconut and chocolate chips. Measure out a half cup of the Reese’s mini pb cups. Cut each pb cup in half and sprinkle this on top of the peanuts. Then use a fork to squash everything down, pushing all the layers together.

Bake for 20-25 minutes in a 350 F degree oven until everything is golden brown. Let cool completely and cut and serve. Or, if you are impatient, use a spoon to scoop some not thoroughly cooled bars out and eat and mmm. But if you let them cool completely, they make lovely bars.
