When I was a kid, my mom would make popovers as a special treat for my siblings and I. (She may have made them regularly, but I remember them as being something special!) She would serve them warm from the oven with butter and jam and they really couldn’t be beat.
I’m not sure why I don’t make them regularly because they are so easy and delicious, but it rarely occurs to me to make them. The other day, though, they popped into my head (ha, ha) and I thought why not try them with a little twist. You may have noticed from the other goodies I bake that cinnamon and vanilla are usually on the ingredients list… so why not try them in popovers! I was not disappointed (although this batch didn’t pop as much as usual and once cool, they ended up rather flat. This didn’t stop me from eating more than I should.)
Cinnamon Vanilla Popovers
- 1 tsp cinnamon
- 1 tsp vanilla
- 1 cup flour
- 2 eggs (room temp)
- 1 cup milk (room temp)
- 1 tbsp butter, melted
- 1/2 tsp salt
Preheat oven to 425 degrees F. Grease 6 regular sized pyrex baking cups or four extra large glass baking cups. Put the cups on top of your stove as it preheats so they warm.
Combine all wet ingredients, then gently stir in dry ingredients until just combined. Divide into your baking cups and bake for 30 minutes or until puffed and golden brown. Serve warm with whatever toppings you want.
I served mine warm with nutella spread on top. Oh my goodness, they were unbelievably delicious. I’m not saying I ate three by myself, but I might have.
