Fall Baking!

It has been chilly the last few days, which always makes me want to turn the oven on and make something! This time around I made pumpkin chocolate chip muffins and bread– three dozen mini muffins and two loaves of bread.

Chocolate Chip Pumpkin Bread:

  • 1 cup whole wheat flour
  • 1 cup white flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 cup pumpkin
  • 1 cup sugar
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup softened butter
  • 1 cup chocolate chips

Preheat oven to 350 degrees F. Blend sugar, eggs, and butter. Add rest of ingredients, adding the chocolate chips last. Grease a loaf pan, then pour batter in. Bake 45-55 minutes.

(This recipe is a slightly altered version of my mom’s pumpkin bread recipe.) I doubled the recipe this time, which resulted in the previously mentioned mass quantities of baked goods.

I also made a simple baked alfredo pasta that was really yummy (that’s the thing on the top rack on the left side). Just combine cooked whole wheat penne, grated parmesan cheese, shredded sharp cheddar, and a jar of alfredo sauce. Stir it all up and bake for 30 minutes at 350 degree F. Mmm! So good.
