Yesterday I made an unbelievably yummy new cake. I found the recipe here, and it is for a Strawberry Cake. I used fresh strawberries from our local Farmer’s Market that my aunt picked up for me. I really cannot emphasize this enough– this cake is amazing. I mean unbelievably deliciously amazing. It is crunchy and fluffy and sweet but not too sweet and the strawberry flavor is so amazing. (Have I used that word already?) It is my new favorite summer dessert. And since it is technically a “coffee cake,” I think that means I could make it for breakfast and not feel bad. Right?
It is pretty easy to make, too. First you sift together the dry ingredients, then beat in the milk, egg, and melted butter. I also added vanilla, which the recipe didn’t call for. The batter is really creamy and beautiful.
Then pour that into a pie plate and start chopping your strawberries.
These are layered on top of the batter you put in the pie plate.
Then you mix up your crumble topping and place that on top of the strawberry layer.
Then bake and enjoy the tempting aroma coming from your oven. Once it is done you can serve it as is or slice it and place fresh homemade whipped cream on top, with a couple fresh strawberries for garnish. Be prepared, there will be no leftovers.
