Today’s “Tuesday Love!” post is devoted to one of my all-time favorite things: baking. I don’t know if it was the weather or what, but I have been so bummed today. I couldn’t even decide what to write about I had such malaise. (Great word, “malaise.”) So while my little sunshine was napping, I realized what I needed. I needed a baking session. Aah, baking, you speak right to my heart (and my increasing waistband). But what to make?
Then I went back to another favorite of mine, my Recipe Board on Pinterest. I had just pinned these yummy looking whole wheat monkey muffins and decided they were the perfect thing to cheer me up. They have peanut butter, whole wheat flour, not a ton of sugar, lots of banana, and chocolate chips… mmm!
First I mixed up the sugars, butter, and peanut butter.
Then I added in the banana.
Then the eggs.
Then you slowly add in the dry ingredients. **I also added in cinnamon (half teaspoon) and vanilla (a tiny bit), which the recipe didn’t call for. I think it made them super yummy!
Then fold in the chocolate chips, pour into prepared muffin tins, and bake. I did a combination of full-size tins and minis.
They were so unbelievably delicious. The perfect thing to cheer me up, making baking the perfect choice for today’s “Tuesday Love.”
Disregard that one on the top left that had some batter spill on the muffin liner.

They are seriously one of the best muffins I have ever had! Even my extremely picky toddler loves them. The friend who stopped by and sampled one said the only thing wrong with them was that I only put one on her plate! 🙂 (And glad you didn’t mind me making an addition to your recipe.)
