Back to School: Lunches

School starts back up next week for the Middl’n and I have been feeling creative about school lunches. He is a major fan of food that is self-contained, i.e. hot pockets and burritos. Sure they are convenient and he likes their taste, but I thought I could make something that he would like, was also convenient, and have some nutritional value. To that end, so far I have pinned the following recipes:

I’m going to sneak veggies in them, too. I’ll also probably switch out whole wheat dough for plain white, and things like that. Shhh! Plus some of our regular dinner recipes, empanadas and calzones. I’m thinking if I make two different things this weekend, then he can have choices for the upcoming week. Then I’ll just make ahead and freeze so everything is ready and he can take out what he wants, when he wants it.

Today I made the dessert portion of some of his lunches: Chocolate Chip Blondie Bars. Everyone needs something sweet and yummy in their lunch, right? I made a pan of these, let them cool, cut them up, then wrapped them up and stuck them in the freezer. Now he can just take one out in the morning, stick it in his lunchbox, and they will be defrosted and ready to eat by lunchtime. Yum!

  1. Hey be careful about things unthawing before lunch, some schools are having very early lunches and stuff might still be frozen…and incase any of those blonde/chocolate chip things fall out of the freezer onto the floor, I’ll eat em right up, just drop off please HEHE
